Variety Composition: Syrah 100%.
Region / Location / Vineyard: The wine comes from the Plataea viticulture zone in Central Greece and the vineyard (10 to 12 years old) is situated at an altitude of 280-380m.
Vinification Method: The vinification process involves destemming yet no crushing, to allow for natural pressing to occur. The juice is cold soaked at 5°C for 12 hours and fermentation gradually increases in temperature, to allow for subtle alcoholic conversion. The wine also sits on its lies for two months to give it additional flavour components.
Tasting Characteristics: The wine has a pale salmon color. It is elegant on the nose with a moderate aromatic intensity, portraying notes of juicy strawberry, cherry, bergamot, sweet watermelon, pink rose and Turkish delight. On the palate, the wine is medium bodied, with high aromatic intensity and medium ( ) acidity that perfectly compliments its slight sweetness. Additional flavours of marshmallow, rose, sweet quince and rose water become apparent when the wine stays open for some time. The wine carries a floral aftertaste that lasts the lingers long on the palate.
Harmony: Enjoy it on its own as an aperitif, pair with pasta with light red sauces or spicy Asian cuisine dishes. It is best served at 10 degrees!
